Special Baingan Bharta Recipe by Jaggu dada
5-6 large brinjals
15-16 garlic cloves
5-6 Green chili
1 tbsp Mustard oil
4-5 curry leaves
INGREDIENTS
First wash the brinjals thoroughly and pat them dry with a clean kitchen towel.
STEP - 1
Cut the brinjal from the middle with a knife from both the sides, now inside the brinjal there is a green chili with 2-3 cloves of garlic
STEP - 2
Now turn on the gas and fry the brinjals on a low flame by turning them well,
STEP - 3
while roasting apply oil on the brinjals and fry till they turn brown
STEP - 4
Once the brinjal cools down, take out its skin.
STEP - 5
Give and mash the roasted brinjal, chilli and garlic in a bowl, add salt, curry leaves and a little mustard oil, enjoy with hot roti
