Dubu kimchi is a well-loved dish prepared using aged kimchi. You can stir-fry the kimchi with pork and serve it alongside boiled or pan-fried slices of tofu. If you prefer a meatless option, you can omit the pork.

To begin, start by cutting the pork and kimchi into bite-sized pieces. Additionally, thinly slice the onions and scallions.

Mix the kimchi, pork, scallions, onions, sesame seeds, grated ginger, minced garlic, sugar, sesame oil, soy sauce, gochujang, and black pepper in the bowl.

For enhanced flavor development and tenderized meat, you can choose to refrigerate it overnight. However, if you're in a hurry, a resting time of about 15-20 minutes will suffice.

Now, using a medium-sized pot, add 4 cups of water and bring it to a rolling boil over high heat.

Cut the tofu into two equal blocks. Then, reduce the heat from high to medium and gently place the tofu into the boiling wate

Allow the tofu to gently boil for up to 5 minutes. Afterward, with great care, transfer the tofu to a colander to drain excess water. Finally, slice each tofu block into ½-inch thick slices.

In a large pan over medium heat, cook the kimchi and pork mixture until the kimchi softens, pork is done, and most of the liquid evaporates, about 5-6 minutes.

Arrange the tofu slices in a circular shape on the plate, leaving an empty space in the center.

Place the stir-fried kimchi and pork mixture in the center of the plate and serve.
